10/365 butcher block sunday

Yesterday Tripp installed a butcher block counter top onto our counter. We live in a small space, and it was always so difficult to cook because you can’t sit hot pans and skillets on formica. When your kitchen consists of one small counter, you need all the functionality you can get.

He moved the stove over about five inches or so which gave us more room. And, ugh, I’m just so happy with it.

We started the day with take out from Waffle House (you do what you have to when your kitchen is out of commission)

Then Tripp installed the countertop and Poppa and Mimi came over.

We made grilled chicken, oven roasted broccoli, beets, radishes, sweet potato and russet potatoes. We ate together and Mimi washed dishes while I got Polly to nap.

In the evening we took the leftovers and made chicken pot pie from them. I wrote out our week on the chalkboard and enjoyed the rainy weather in a tidy house.

(Yes, there’s a fly strip there. We recently won a battle against a horde of gnats. We haven’t taken down this strip as a reminder to all flying evils that we mean business. That’s just real life, folks)
